Nou Candil uses all fresh local produce, vegetables are bought daily and are not allowed to see a fridge, these local vegetables are used and cooked while still full of flavour and Mallorcan sunshine. There are always some special dishes on offer, changed daily, using fresh market products that are available that day.

The style of cooking in the restaurant is based on freshly cooked food prepared in the traditional style of the island, this takes time, therefore the restaurant is known for "SLOW COOKING", as Joaquim says, how can good food be cooked quickly.
